I wish I had gotten the smaller display." but if you've got a hard budget, your decision has been made for you. Triple 27s it is.
There are plenty of arguments out there how 27" is the perfect size for sim racing for its realistic FOV and that anything bigger just lends a larger-than-life element to things. So you should be quite happy with that setup.
