I use a Calphalon Katana Series chef knife. I like it a lot but wanted a global. I got the katana when the wife and I registered for our wedding 3 years ago. She wouldn't let me register for a $150+ knife . I'm likely going to upgrade here soon that way I have 2 very good knives to throw around, stab ho's and chop off zombies heads. You know, everyday cooking..

not an expert either, but i have these and love them. i use them every day and am amazed how well they keep their sharpness with just steeling

I bought a Hattori HD-8 damascus gyuto (chef's knife) from them (and a couple of other knives as well). Ridiculously sharp.

Best knife I own is an Aritsugu blue steel sashimi knife that I bought in Kyoto a couple years back.
