First Service..

9mths are up and take the car for its first "vehicle check". I knew the car had very little engine oil left (1/5), so on picking up the car asked the service advisor who insisted that all fluids levels are topped up (mind you same person also said service book was stamped but wasn't). Of course, running the car showed no changes to the oil level....

As coincidences go, got the low oil level warning two weeks later, which meant another trip to said dealership for more oil.... Didn't complain too much - thought this might be difficult given that services are free (for the moment.)

Question - is it normal not to touch the engine oil (and just expect people to return between services just to add oil)?? Or should I have insisted that oil be added at each service?

You can buy a 1 litre top up kit from the dealership,

If it was a proper service, they should have replaced & topped up the oil to max level.

It is then normal to require a top up, but perhaps 6-12 months after your last $tealership visit

What does 1/5 mean (at the Minimum level)?

If you got a warning just 2 weeks later, I think I'd be more worried about an oil leak or a faulty oil level monitor.

1/5 I presume refers to the electronic dipstick readout which shows full as 5 little squares.

Vehicle check is different from oil change. That said, my service people have topped up my oil as required, even when in for unrelated warranty work - little stuff like that impresses. Your lot sound a bit disinterested perhaps.

Personally I think it is a being cheap that they don't replace the oil after the first 12 months in a brand new car.
