Soup du jour: asparagus velouté
Recipe from Bruno Albouze

With home made whole wheat bread. I wanted the asparagus garnish to float for a nice presentation, but it had other ideas!

Really nice flavor combinations with asparagus, celery, shallots, garlic and spinach. A touch of cream and butter to smooth out the emulsion. Based on home made chicken stock, made last night. Fresh grapes for dessert.

Hubba, what do you do with them after you steam them? Marinate in something? I used to get great grilled arties at Houston’s in Pompano Beach FL. I love arties but have never grilled them myself. I either stuff them or make the small ones steamed.

Brush them with olive oil mixed with garlic powder, onion powder, lemon pepper, ground chipotle and ground cayenne pepper. Those last 2 can be left out if you don't like a bit of heat. Then throw them on the grill for 10-15 minutes. They can be put on grill immediately after brushing, or let them sit a bit, really doesn't matter. It's easy to prep the 'chokes early if you have a bunch more to prepare. My wife likes straight peanut sauce, I prefer to mix in a bit of Miracle Whip for my dipping sauce. It is really delicious. Let me know how it turns out for you!
