Pizza!

Yes, it's a crazy, mixed-up world when pizza happens on a Saturday.

I used up the last of my coarse semolina. A totally different item than semola rimacinata. It gives the crust a more tender chew than rimacinata.

A little help please.

I just got back from a fishing trip to Alaska. My buddy and I brought home 150 pounds of halibut and king salmon fillets. The fishing lodge fillets, vacuum seals, and freezes the fish, then packs it for airline shipping.

Do any of you have halibut or salmon recipes that you recommend. I'd like to try new and creative dishes. I'd be happy to try your recommendations and report back with photos.

In the meantime, here are a couple of photos from the trip.

This place even grows their own chickens.

Nice catch! Halibut is my favorite. Pan seared is my preferred way to go - the flavor is subtle so EVOO, butter, salt and pepper are enough for me.

Can you share a link for the fishing lodge? An Alaska halibut trip is on my son's and my to-do list.

The lodge is Leonard's Landing. It's in Yakutat, AK. You'll have to look that up on a map! The general manager's name is Dawn. Husband is JT. The dog is named Whiskey. They have two or three of their kids working there; a real family affair. They have everything from dorm rooms with to stand alone units. We got a duplex with 2 bedrooms and a full kitchen right on the water. It was just me and my buddy but it will sleep six. It was $500 per night.

We had a great time and I'd go back in a heartbeat.

Either are great baked. I put 'em in a shallow casserole, sprinkle some fresh herbs on 'em - dill, oregano, thyme... whatever - then lay thin slices of lemon on top. 350 farenheit, 10 mins per inch of thickness.

Blackened salmon is a good one. Give the fish a nice coating of cajun spice and then sear it on a hot griddle or in a skillet.

If you just want to taste the salmon or halibut, you can't beat poached in a light white wine.
