I just had a thought, are the induction folks also future Tesla or EV owners and the gas folks are sticking with ICE? Just a thought.

I'm a hardcore ICE guy and my next car absolutely must be a NA V8 or NA flat 6 but i've got no time for gas cooktops other than I loathe the digital inputs of induction and the pots moving on induction tops when stirring.

So i found one induction top with knobs .....



That may well sway me.

I think induction can compare with a high end gas stove, but not anything mid range or lower. We've been living in an apartment with a the upscale Whirlpool gas range, the large burner doesn't get hot enough to boil water quickly and doesn't get low enough to simmer. Even the small burners don't go low enough.
In comparison, the induction stove at our house works much better on both the high and low end, is much easier to clean. We had very few pieces of cookware that wouldn't work on the induction burners.

Yeah someone above compared to WOLF, OK I can spend 2K on an induction top or $6K on a WOLF gas top to get same performance.

My big issue remains the lack of heat on burners suitable for mid sized pots, takes me freaking ages to boil water and when i add food the boiling just STOPS.

You need to get a good gas stove, I mentioned Wolf earlier and also said don't buy a crappy gas stove because you won't get all the benefits gas can offer.

My neighbour switched from Gas to Induction last year during their kitchen remodel. The induction stove was like $5K, and then they spent another $2K on pots and pans.

Correct you really just need to experience a better gas stove. In my new kitchen I went with open burner bluestar range. 25k BTU open flame burner can sear a steak on cast iron like nobodies business.

Admittedly they went hi-end, but looking on line the cooktops seem to start at about $2.5K US and then you need an oven on top of that.

They lost me with "easy cleaning", gimmie a fucking break. gas has it's advantages but even an easy clean gas top is still a massive PITA to clean.

I have never cared for electric. There are a couple different burner sizes, use the right tool for the job. Besides, when was the last time you saw electric in a restaurant worth a damn?

I think you may be confusing "regular" electric cooktops with induction. Both require electricity but they differ in how they go about cooking.

We have induction in our shore house and gas in our regular house. I like them both and honestly don't notice that much of a difference in quickness or regulating the heat with either.

I will say that our Bosch (induction) can't ever look as fierce as our Thermador (Gas) does when all burners are on

I have that kettle. What do you use for pour over? I have a Beehouse into a Hario, but man it loses temp faster than I can drink it.

Yeah, I’m not getting that. I’ve never had trouble getting water to boil on a gas cooktop. Ever. At all. Not even a little bit. I can understand the appeal of a smooth induction cooktop from a cleaning standpoint, but then you are limited as to the type of cookware you can use, and I prefer being able to actually see the flame to a digital display. My flush cooktop is a Wolf and I don’t think an induction cooktop is going to give me better control of the heat. Mine has an entire low heat simmer range of adjustment in addition to the normal range.

Induction, and i was a big supporter of gas. I still have the big range but got the wolf 15in induction top for my island. Has 2 burners and goes for 1200 if i remember.

i must be doing things weird cause i never have the issues people are listing here with gas stoves.

food cooks evenly, water boils fine and quickly, etc.

only thing i like about the induction is you just wipe it off rather than taking the grills off and wiping down it down.

Ive had induction as well and tbh, didnt notice any difference in my cooking style or ease of cooking or anything like that.

Since Gas are cheaper, i stick to gas
