Are you cooking them whole or cutting them in half? Cook a handful of slices of bacon in a cast iron skillet. Once they are done remove the bacon and half the bacon grease. Put the sliced in half sprouts into the pan and cook to the desired crispness. While the sprouts are cooking, cut the bacon into bits. If the sprouts start to dry out add some of grease removed earlier. Once the sprouts are done, add the bacon bits back into sprouts. Add fresh grated parmesan and enjoy. |

Brussels sprouts...I’m really a fan of roasting vegetables, especially cauliflower and Brussels sprouts. Higher temps, like 400*-450* will get some good caramelizing and crispness.
You might give this a try as I think Mark is usually spot on: Roasted Brussels Sprouts |

So this past Sunday after seasoning and injecting, a Pork Butt I slow roasted it for @ 6hrs at 250. Made some yummy Tacos Carnitas.

Ok, I need some help from the Americans because as far as I know, this originated from here.
My wife loves cornbread. I do not. But I'd like to make her some as part of a meal for Mother's Day. Anyone have any amazing recipes for cornbread? I'm open to doing it on the smoker if that's even possible, the oven, whatever...just help me out with some amazing cornbread please! I'm a little lazy when it comes to cornbread, but I get good results with the following.
Start with box of Mexican style cornbread. Use a can of creamed corn with the mix. Add jalapeno, diced, as well as any other spices she may like. You can cook as individual servings or the traditional method. Of course this is only an option if she like Mexican.... or trying new things. |

Use milder peppers than Jalapenos.
You can also use honey in the mix to make it sweeter. |

Cornbread is not something I have messed with yet. I like it, but I don't love it. I do have a cast iron pan that is made for cornbread and scones that I have not used yet.

I didn't bother with pictures, but I made a nice chicken marsala on Saturday night. It was my first time making it, but it turned out really good. Next time I want the thicken the sauce just a little bit more.

My wife doesn't really like garlic, so I often forego when dining. Last night as we entered Outback I said I was having a Wedge and some of her plate, to help me wash down my doubles of Templeton rye. She ordered a "shareable" sirloin. You get to order 2 cups of sauce/topping. She picked the bourbon (she doesn't even LIKE bourbon, it's just the first words out of the servers' mouth) and I got the garlic butter.
Holy mother of all things good, this could be like last year when I discovered you could use lotion on Wednesday!!!! |
