Lots of EVOO, oregano, salt and pepper

No beets, chickpeas or lettuce - those are North American interpretations. The imported Greek feta is a game changer, purchased at a Middle Eastern grocery. Creamy, smooth and savory.

The plastic-wrapped stuff in the local mega grocery store is terrible by comparison. No dairy flavor, hard, sour, overly and strangely salty, not in a good way.

I love that cheese and not that overly salty in brine imitation. An acquired taste for sure.

Smoked Carnitas Tacos! I've prepared this in various ways: Roasted and seared in a pan for Crispy texture is another fav.
But generally you begin with a nice pork butt/shoulder, seasoned with your favorite rub. Bake or Smoke for at low temperature of @ 230-250 for 8-12hrs minimum, depending on size. Pull apart or chop.
I use both corn & our Tortilla, add minced onion and cilantro and queso fresco with homemade Salsa.

Went to a BBQ joint that used to be all the rage. Then the owners got divorced, and the recipes were part of the settlement, and he didn't get them. Seems the statute has expired, and the joint's new name includes "OG" in the logo.

Wife had tri-tip with spicy sauce. I had the hot links and 50/50 sauce. Each dinner comes with 2 pieces of bread, beans, and choice of 2 sides. At the end of the night, all the was left my two sides (I simply don't appreciate cole slaw or tater salad)

Where did the name cole slaw originate?
