Quite honestly, I think I would treat it almost like a lobster and do some kind of stuffing for it....

lightly cook some chorizo...

Then clean shrimp and stuff with the chorizo/along with some kind of pepper chutney or pico?

Grill....finish on grill with some kind of cheese...queso fresco? chihuahua? till melty...
