These were taken from my Rebel XT (the model before the XTi). Other than 2 more mega pixels and a few other upgrades both cameras are identical. Just remember that good photos can be created from any kind of camera. Good technique, composition and post processing are key to taking terrific pictures.

Shoot in Av mode @ ~1/60th of a shutter. Keep the camera steady as possible (obviously) and shoot away. Use IA Servo focusing.

The general rule of thumb for rolling shots is to set your shutter speed 1/x where X = the speed the cars are moving at. So lets say your both going at 45mph, so set your shutter to 1/45 or if your on the freeway with the cars moving faster, you probably need to set it at 1/60. |

I'm currently taking a class to learn about this too... here are some pointers.
Your XTI should have a light meter in the viewfinder use that to help you figure out correct exposure for your shots. Usually you want it to be in the middle at 0.. so depending on whether you are in AV or TV mode you would just adjust the f-stop (how wide the opening of your lens is..f-1= widest f-22 smallest) or shutter speed until the meter shows 0.
