Finally found E85 locally...
For awhile the nearest E85 was several hundred miles away. But a station about 20 miles away now supplies it
My car is 2007 335i with stock newish turbos, DP's, DCI, CP, and VTT inlets. LPFP is stock, but injectors, coils, and plugs are all new. I want to give it a shot but I don't want to do anything unsafe. My thought is to run an E40 mix and try the MHD E40 OTS map. I do intend to measure the ethanol content of both the E85 and the 91 that this station has. The 91 around here tends to be 8-10% ethanol. Or for my mixture calculations should I just assume that it's 0%? This assumption would lead to a higher than calculated ethanol content. Is this an okay plan?

Give it a try. Use the ethanol percentages in both for calculating the total 40%. It does not matter if the ethanol content of 91oct is couple of percentages off from 10% since the difference is immaterial. Finally, log and check that your LPFP and HPFP are fine with it.
