Upgrading Turbos in Winter, Can’t tune...

I have an oil pan gasket that can be put off no longer. I’m going to be swapping my OEM turbos for some RB Two Plus’s while in there. Being that it is now winter in Wisconsin can I safely drive on these turbos, running the MHD/JB4 hybrid pump BEF and JB4 map 1 until I can get properly tuned when the cold and snow disappear?
