N57 Boost Drop Off / Strangled In High Gears?

My 2011 330d N57 LCI is being a bit weird... The car has had the DPF gutted and mapped after it started refusing to regen. The car drives great, but gears 3, 4, 5 and 6 seem to drop boost after 3000rpm. 1st and 2nd, no issue, revs right around the tacho on full boost. Only way I can describe is that in 3rd (for example), floor it, pulls hard until 3000rpm, but then you can watch boost start to drop off (Torque Pro) and the car won't rev out, feels strangled.
