Flaming Doctor Pepper- usually made by filling a shot glass 3/4 full with Amaretto, and 1/4 high proof liquor (such as Everclear or Bacardi 151). The two liquors are not mixed; rather, the high-proof alcohol is layered on top to burn more easily. The shot is then set on fire and dropped into a glass half-filled with beer. The flaming shot is extinguished by the beer, which foams up and is downed. It tastes like Dr. Pepper (not sure if you have it over there).
Irish Car Bomb: 1/2 shot Jameson whiskey, 1/2 shot Baileys Irish Cream, and 3/4 pint Guinness stout. The whiskey is floated on top of the Irish Cream in a shot glass, and the shot glass is then dropped into the Guinness. Once mixed, you down the entire contents.

Actually just a few locals drink absinthe on a regular basis, it's more of a tourist thing... But I have to admit that a shot of absinthe mixed with around 10 oz. of 7up or Sprite is pretty good
Also mixing shots with beer is not really common here, only thing I can think up is more like a game than an actual drink... First round is called "trip to the forest" - you start with a pint of beer and every time you drink, you have to top up the glass with a pepermint liquor. When it's full of pure liquor, you start all over again but now you top the glass with beer, that's called "back home". Winner is obviously the last man standing or the one who end up with a glass full of beer again ( But I have yet to see that happen )...
