what fluid replacements are included in free maintenance program?

All fluid is included in the free maintenance program. However, some fluid (transmission) will not be changed within the warranty period because its "lifetime". I would recommend changing auto trans fluid at around 40k.

Also, for most BMW problems start off by scanning your car with the Peake Research Tool. It contains the actual BMW codes. If you want to register a newly installed battery for free (just buy a $10 cable) and google/download BMWLogger

For USA maintenance plan, Engine oil and brake fluid is changed for free based upon CBS. Depending on dealer, one may get free top-offs like coolant and windshield fluid.

Per BMW: (non-M)
Power Steering fluid is considered lifetime
Coolant is considered lifetime
Transmission fluid is 100K miles
Diff fluid is considered lifetime.

^ So it looks like only the brake fluid and washer fluid will be changed during the warranty period.
