Low engine temp and poor engine performance, any ideas?

I have been having trouble getting my car to run like it should. The acceleration is ...well, there really isnt any. Runs like I am carrying sand bags and very uneven when hitting the gas. Have had a wierd type of limp mode where the throttle cuts out and the car idles up and down on its own while I am coasting off the road because the gas pedal does nothing. Has happened 6 times during hard acceleration. The kick is that the dealership has no idea what it is and gave the car back since they could not duplicate the problem. I have not had my HPFP replaced and i think it needs it because i get intermittent long cranks along with all the other fun.
There are a few theories . One is that the engine running that cool is a sign of something wrong because I live in Arizona and even when it is 110 degrees I never get to 240 on the temp gauge city stop and go or highway driving.
Since the car doesnt show coes for the problems the dealer cant do anything. I think that maybe the ecu is messed up and thats why it isnt throwing codes for those times that the engine cuts out and also why it is running messed up.
I would appreciate any feedback or theroies as to what might be the problem.

My car doesn't even break 230 degrees idling/crawling for hours in similar temperatures with the A/C on full blast. It heat soaks, but you shouldn't really be flogging it too much in the heat anyway.

Was runnig with Dinan Stage 2 and Stage 3 but they were not working becauseof something with the car itself. Now running stock software and still no better.
I dont necessarily flog it, no whips or paddles. I dont have aproblem with the engine temp because it never gets that high. from what I have found here I am running q bit below the average operating temp which is odd especially given the climate here. I just wondered if that is a sign of some problem that has not been looked at yet which could solve the larger problem.
