Aubergines Bonifacienne
Stuffed eggplant in the style of Bonifacio, Corsica
Recipe from Bruno Albouze on yt

Served with marinara. Eaten al fresco with strawberries and mountain views for dessert.

Excellent eggplant dish stuffed with cheese, breadcrumbs, egg, onion, shallot, garlic, parsley, oregano, basil and thyme. Fried in EVOO, can also be baked. Frying is traditional Corsican.
