Thinking of something to make later on but want to remind I'm not sea food fan, prawns etc or pizza including Hawaiian which I used to eat

The latest from Rick's kitchen,I'm having chicken jalfrezi with fragrant pilau rice while the other half is making do with a chicken fillet and pasta with dolmio pasta sauce. A bowl of salad is drying after rinsing,I rinse it anyway even if it's written so on the pack.

Indian rice pilaf

Gluten free, and except for a small amount of ghee, would also be dairy free and vegan. Ghee is optional and I used a small amount for the rounding out of flavor and smoothness.

Really excellent dish. Finished with fresh mint and cilantro leaves, and a tadka of hing, cumin seeds and red chile. Accompanied by mint chutney and mango pickle (achar).

fresh mint leaves
