Since the car was "stolen" the insurance wouldn't pay for the damages to the car that your friend hit, anyway. Usually, insurance only covers "authorized" drivers. What sucks is, if the teacher had insurance, it probably would have been covered as a theft where the car is recovered damaged. The teachers only recourse is to go after the family at this point.
