I use T6 0w-40 in winter and T6 5w-40 in summer. I think they don't offer T6 0w-40 in US anymore. I've been using T6 since 2010. Probably 70-80k.
Primarily concern with OP is extra heat from upgraded turbos. I would address that with bigger and better coolant radiator and dual oil coolers that will cool the oil and increase the capacity and will not "experiment" too much with oil especially thick oils like 20w-50. If AT then install trans cooler as well.

That said, I'm wondering if Motul brings temps down at all. I figure a cooler motor in summer can't be a bad thing.

Anyone using Motul have a sense of whether temps are lower than with other oils?
I noticed a 10-20 degree drop in temps after switching to redline 5w-30 in normal driving.
Wow; that's big!

That's probably in F not C so appear to be more significant due to double digits, but still lower is better .

Does the particular oil really matter? All of the oils listed are likely adequate provided that we are diligent in proper maintenance.

Thanks for the input feuer. I'll check out the T6 oil. I am installing a VK motorwerks oil cooler with a Setrab core to help with the heat. I think in the summer I will run a 5w-40 or 50 synthetic oil. I drive for about 3 hours a day 5 days a week at an average of 80-90mph so that is why I want the best proven oil for our platform.

The n54 has tight internal tolerances and is prone to oil leaks. Thick oil could help with temperature but I assume it would have adverse effect on the other two above. Temperature should be addressed differently I think, like I said above with better cooling. I drive a lot myself, leteraly everyday, high speed and also stop and go traffic on I90 construction. I have the PPK aditional coolant radiator which helps when car is moving. This is why BMW went with oil cooler and add on coolant radiator and not different oil. Aslo they are very affordable aluminum coolant radiators. Intercoolers as well.

+2 I switched to this from the old Bmw oil at 90k. Currently at 125k. I can anecdotally say that it lowers temps about 10 degrees and takes a little longer to get into the 200's F.
