Our anniversary is today, but we had a big dinner Saturday night, and it turned out to be at home because our dinner plans fell through.

Reverse seared T-bones, steamed lobster, scalloped potatoes, skillet seared green beans.

The place we had a reservation (Hotel Saint Germaine) changed their menu the night before. We went from expecting Tomato Gazpacho, shellfish trio app, choice of medallions of beef or swordfish steak, and wine included, to escargo, chilled seafood platter, and dessert. I won't eat escargot, and have a mild fish allergy. It was extremely disappointing.

That sucks, especially when you are looking forward to something.

But what is reverse seared?

I was just kidding.

You can do most of those things on a grill/smoker with a dutch oven too. I have side burner that I use a lot.

Oven broiled, then finished on high heat on the stove with (at least) 1 stick of butter continually spooned over the meat, with tyme if possible. One of my younger twins loves to cook steaks this way.

How about smoked? That is a different taste than grilled. You could get yourself a pit barrel where you basically don't have to monitor it and have smoked everything. It's the newest thing I have so I'm infatuated with it right now - I'm sure that will pass in time.

My neighbor has a smoker - it smells so good. I was thinking about giving it a try. I happen to really enjoy cooking. As much as I love summer, I'm looking forward to cooler weather so I can put on the oven.

Word to the wise on this - partially cook the bacon on this ahead of time. Scallops only take a minute or two per side. That doesn't give the bacon enough time so most will end up overcooking the scallop to finish the bacon.

Partially cook the bacon on low, half way maybe a little more - rendering some of the fat out will also minimum bacon "shrinkage" once its cooked with the scallop. By the time the scallop is done the bacon will be perfect
