My Bride's last day at work was yesterday. She's now officially retired. While she was driving home from Toronto yesterday I had some champagne chilling for the Hot Tub, followed by young asparagus grilled, and for her a salmon fillet Sous Vide with an Oscar topping and for me a Strip Loin Sous Vide finished on the grill with an Oscar Topping. Homemade Focaccia, and a 10 year old Trius Red (OMFG Smooth) and finished with some lovely ice cream. One of my better efforts.

Last night was catfish for myself, some type of chicken for the better half. Tonight she knocked it out of the park again. Potatoes, Brussels, and BBQ chicken. Can't tell ya everything she did to them, I was just the grill man again! Finishing the night with some bourbon.

Warm goat cheese salad
Recipe from Bruno Albouze on yt One of the great salads. Fun to make and delicious to eat. Melted goat cheese on grilled homemade English muffin, on arugula on Bibb on Romaine. With toasted walnuts. Our Easter Sunday meal was pressure cooked lamb with roast potatoes, Ardennes vegetables,
Yorkshire pudding with mint sauce for the lamb after a starter of horseradish soup. |

Forgot to take pictures of the meal, but aps was homemade guac, fresh pineapple, and some bomb salsa we found during our 2 hrs grocery trip (there's a bar in our store so we made the best of it!). Dinner was Lime and garlic grilled salmon, fresh mango salsa, some of the guac from earlier, and homemade coconut rice. Not your typical Easter meal but that is okay. Some holidays it is just us down here as the family is in the north. We try our best, and succeed in bulk majority of cases, to enjoy our day to the fullest.
