Getting sick of not eating what I really want. But it’s something I really needed to do. Wfh and covid packed on too many extra pounds.

So darn good.

All veggies cut into brunoise (fine dice).

Quinoa
Red onion
Celery
Tomatoes
Mango
Parsley
Feta
Lemon flesh
Dressed with vinaigrette of EVOO, honey and lemon juice, salt and pepper

On a base of diced avocado seasoned with cumin, salt, pepper and lime juice.

Garnished with heirloom tomato, Bibb lettuce, kalamata olive and parsley leaf.

Went to a local restaurant last night for some southern style comfort food. I had deep fried porch chops, collard greens and cole slaw. Ends up they were having a buy one get 2 free happy hour on cocktails. No pics, but that's good in this case 'cause no evidence!
