I've had some good mexican food on my mind lately, in the restaurant this is one of my wife's favorites.

I went from scratch on everything, Tomatillio sauce, salsa, and guac.

The pork and salsa verde was incredible. I would have liked to adjust the salsa and the guac a little for my taste (more salt more spice, a bit more onion), but my wife, kids and her friend that came for dinner really liked it the way it was. Sometimes you have to please the crowd.

Definitely will make again!

I didn't get pics over the weekend because no signal, and the waitress wouldn't give me the wifi pw.

Polo relleno: BOMB!!! OK, high altitude and working all day makes one very hungry, but that shit was GOOD. Chicken breast sliced in half, grilled and then flipped onto a slice of cheddar in the pan, seared, then covered in a creamy white sauce, double-tap of asparagus. Sent back the nearly-empty plate, because couldn't wipe the last bit of sauce up with a tortilla chip .

Those are great burgers at Capital Grille. I had one recently. That blend of chuck, short rib and brisket has great flavor.

I just ordered a tenderloin roast from him to try grilling this weekend. I usually order Allen Brothers but they are effing expensive and his burger was so good I thought I'd give his steaks / roast a shot.

I can't believe I forgot about this thread....

Cooked up some Filet, King Crab and mushroom risotto a few nights ago and didn't think to take a picture.

I think it was the tastiest meal I've ever done. I've failed you all.....

Did you do the risotto from scratch? Stir, and stir, and stir, and stir. My arms are getting tired just thinking about it. But the result is worth it.

Yes, from scratch.

And you are correct, the results are worth the extra effort.

As good as it is right out of the pan for dinner, the fried risotto cakes the next day are part of the appeal to making risotto.

We have a friend that takes a trip to go fishing in Alaska every year. His wife would tell you that she can not cook, so they end up bringing their catch over for me to prepare.

This time I busted out the cedar planks, a little salt and pepper and then basted them in a compound butter (butter, garlic, lemon zest).

That must be salmon, not thick enough to be Alaskan Halibut. Would still eat!!
