Somehow we ended up with a gigantic cauliflower. So today I riced it all up. We had crispy black pepper tofu over cauliflower rice with broccoli.

Wifey and I teamed up to make some coconut curry chicken from scratch. Roasting the spices, then grinding them into powder. Taste-wise it turned out pretty good. But next time we need to use less liquid. Orange chunks are sweet potatoes. We had it over the remaining cauliflower rice from the other night.
