Turkish stuffed eggplant

Roasted eggplant stuffed with onions, peppers, tomatoes and garlic. Served on a bed of couscous and drizzled with EVOO. Eggplant skin a bit dark, so deduct a few points for aesthetics. I like roasted veggies well done and eggplant is tricky to achieve fully cooked with skin not too dark. Flavor and texture were 10/10!

Fresh grapes for dessert.

No lemon for the schnitzel? When I worked for UPS in Nürnberg back in the late 80's, the local Gasthaus had a huge Stammtisch for us. The centerpiece was a model UPS truck. I would go there several nights a week for dinner. Their schnitzel and pommes frites were awesome. I would always smush a lemon slice over my schnitzel. Good times then. My other favorite was their Brats and Kartoffelsalat. How I miss those days.

When I left Germany, the locals presented me with my very own Stammtish centerpiece. Being invited to the regulars' table was always an honor. The Krokettens were to die for. I could eat an entire bowl and nothing else.

Please be gentle with your comments... This is definitely not the traditional Turkish Imam Bayildi but a facsimile concocted with what I had on hand. And my apologies to chassis for coat tailing on his dish.

1. Carefully carve the side of the pepper making sure that you do not puncture the bottom and remove the seeds. Prepare your parboiled fillings. Stewed red and green Roma tomatoes, green and black olives, green onions, red and green pepper and garlic.

2. Fry the pepper in olive oil on all sides until semi tender. You don't want it mushy.

3. Insert the blanched pre-cooked fillings and bake for 20 minutes @325°. Serve on a bed of Orso.

Stuffed pepper and orzo looks great!


Schnitzel mit Hänchenbrust from a couple of nights ago.

Super good, super easy.

Pound boneless, skinless chicken breast thin, season with salt, pepper and freshly grated nutmeg. Coat with flour, then dip in beaten egg, then coat with breadcrumbs. Fry in hot vegetable oil ~3 minutes, flip and add 1-2 Tbsp butter, fry for 2-3 minutes. Transfer to paper towel to drain. Serve with cooked veggie of choice, potato of choice, or salad. Or all of them! We had ours with salad.

Salmon quiche
Recipe from Brunon Albouze on yt

Fresh salmon, smoked salmon, feta, onions, broccoli. Quiche sauce seasoned with nutmeg, salt, pepper and freshly chopped rosemary and thyme.

Basic shortcrust pastry with butter, egg, salt, water and flour.

Great combination of textures and flavors. Served with salad. Grapes for dessert.

NY strip sautéed with onions, garlic and rosemary, finished in the oven.

Raclette gratin. Made this a couple weeks ago and have some in the freezer.

I never had Tofu before. My idea of tofu was like the old joke: " Buy tofu, dump in garbage, cook a steak."

Not fair for sure so I decided to try it. I made a "beginner's recipe" egg free salad on a French baguette that I just baked.

My thoughts:

Ease of preparation: A
Taste: B+
Texture: D

I might give it another try in a seafood chowder where the texture might match some of the Bivalvia's.

Give it another try. Remember that tofu is bean curd. It is not like any other food item.

Toss it in a veggie stiry fry and season with Tamari.

Try frying the tofu in oil, I like sesame oil. EVOO, or any high temp oil (canola, grapeseed, peanut, sunflower) also work.

So there's a couple of Thai places near me and I eat at one of them at least once a week.
I really enjoy their Tofu Thai Fried Rice.
I can confirm that stir frying it in some type of oil and topping it with soy sauce, Delicious!
Frying also helps with the texture.
