Yuhp. In this tiny ass town where everybody definitely knew each other. Pulled in with the BMW and immediately got stared down and even had a couple locals follow me to the gas station. It was the sketchiest I've ever felt. Just seemed like one of those places you could "disappear" and nobody would ever say a word.

+1 on the apple and alder. The family doesn't like as strong a smoking taste, so I moved to these lighter woods.
I have a red bullet with an intervening water plate. I almost always fill it 50/50 with water/apple juice. |

I've been grilling/smoking for years now, but am no expert by any means. I'm old fashioned (and broke) so I still use my charcoal barbecue to smoke. it works wonders, and honestly I don't mind tending the coals and watchign the temp. that's part of the fun for me, making sure it's perfect.

When i get home i can add my rib rub recipe if you'd like, but only if you like spicy. if not, then don't add cayenne/paprika/cumin. seriously though, smoking is great. experiment with different woods, rubs, and marinades and times and all that. smoking is an art and like anything else is going to take time to develop technique and know-how.

yes! i use a water/juice mix too for certain foods. a friend actually told me this little secret...add a few cloves of garlic and some chopped green and sweet onions to that mixture and enjoy. it's SO FCKING good.
