My MIL bought me a Geek Chef Pizza Oven for Christmas, and we tested it out tonight. I think after a little bit more trial and error on oven temperature and time, we will have it figured out. I forgot to get pics of the pizzas before and after the oven. Too much going on!

Got some Snake River Farms NY strips for the cabin. Got some new thermometers and going to try a reverse-sear. Oven at 225 until steaks reach about 120, then mark them on the grill and serve them up. Now needing to pick up asparagus on the way up too!

There’s also some olive oil, balsamic vinegar and Parmigiano Reggiano on them, all added after they come out of the oven.

Actually, when I was posted in Halifax, there was a "Dépanneur" on Russel St (within walking distance from the base) that use the Donair Sauce as the Base Sauce... It was so Fuchen good.

My bride is doing lobster ravioli with a rose sauce that is getting a couple of big lobster tails sautéed and added to the sauce. It's not a bad day to be a fat old retired copper.

This was very tasty.

I bravely ate my DW's leftover takeout dinner from last night for dinner tonight. I say bravely because she was sick for most of last night and all day today, blaming it on her dinner. With the way that my intestines have been packed/constipated for years, I welcome the consequences if does the same thing to me.....

Normaly for New Year's Eve Dinner I do Cheese Plate and Charcuterie. This year I decided to surprise the Better Half.

Cream of Truffle Soup, Beets and Brie Bake with Honey Sauce, Lemon Garlic Arugula Greens, Braised Beef Medallions with Demi-Glace Sauce, Almond Gremolata Green Beans and Duchess Potatoes.

The Dessert (Salted Dark Chocolate Tarte with Raspberry Coulis and White Chocolate Raspberry Mousse) will be served tomorrow night with tonight leftover.
