We do a root veggie casserole anchored with beets of any color a handful of times during the late fall and during the winter months that generally has those same ingredients. Depending upon what's available, we might choose to use parsnips, rutabaga, and fennel. As far as the dish's final flavor goes, a half-dozen ingredients always suffices. If we don't include onions, we include garlic. We haven't used shallots, but I don't see why they wouldn't work, too. Regardless of the combination, we always include two or three springs of thyme.

Deconstructed stuffed cabbage. Way easier than boiling and rolling the cabbage. Just as tasty. We had it over pearl couscous.

When I used to live in Massachusetts, I would occasionally pick up a meat pie at this Italian place in North Attleborough. Different style, of course, but still...mmmm. Loved that meat pie.

Even in Québec (birth place of Tourtière) there is 5 or more geographical variations. This on is made of 2 parts ground Beef, 1 part ground Pork and 1 part ground Veal. The mixed meat with seasoning rest for a day in the fridge before being pied.
