Last night we had a chicken enchilada casserole. Also, a couple months ago Mrs H brought home these 2 cookbooks, and they’re great! Highly recommend if you are looking for easy and tasty meals.

Wife took some chicken pieces and garbanzo beans and made a soup last night. In a separate pan she made Spanish-sorta rice with corn.

Put them both together in your bowl, add some new salsa, and viola!!!!!

Sorry, I'm often too distracted by the food to remember all my E90 friends.

Bought an eye of round roast [on special] which is not the best cut and made four steaks. A little tenderizing and marinating and voilà: steak dinner à-la-cheap. With fried onions and mushrooms, mini potatoes and baby beets.
