Pastitsio and salad
Pastitsio was a gift from the freezer. Pastitsio and moussaka are interesting Greek entrees, and share the cinnamon-nutmeg seasoned meat mixture and Bechamel sauce. Pastitsio uses pasta while moussaka uses veggies (eggplant, potatoes and zucchini). Both are really good. Grapes for dessert with dinner. Mango ice cream a bit later!  |

Shrimp étouffée, Cajun style
So darn good! Brown roux, trinity (onions, celery, bell pepper), garlic, green onions, Cajun spice, stock (I used chicken), Worcester sauce and Louisiana hot sauce all create a unique and amazing bayou stew. I made my own Cajun spice: oregano, thyme, onion powder, garlic powder, cayenne pepper, white pepper, black pepper. Served with long grain rice. I used Basmati because that’s what I had on hand. Cajun style, to my understanding, means no tomatoes. Tomatoes make it creole style, plus different proportions in the spice blend. Stock should match the protein. I couldn’t find seafood stock and chose not to make shrimp stock. Chicken stock is an “allowable” substitute!  Inspired by a rennlister from bayou country.
