Chicken ballotine
Twice-baked potatoes Creamed spinach Chocolate tart with white chocolate ganach montée Great dinner! Sorry no pics, got caught in the excitement of company and timing of getting the food on the table at the same time. There are leftovers for pics...  Ballotine: whole chicken deboned (by me), stuffed with wild rice, mushrooms, leeks and onions. Gravy made with mirepoix, chicken stock, deglazed roasting pan drippings, butter and cream. Potatoes: Baked Idaho potato shells filled with mashed potatoes with parmigiano reggiano, cream, butter, salt and pepper. Spinach: spinach (frozen, sorry!) with homemade Béchamel sauce. Tart: as pictured. Chocolate shortcrust pastry, filled with milk chocolate ganache thickened with egg. Chantilly ganache montée with heavy cream, white chocolate, vanilla paste and gelatin. Merry Christmas everyone! Dinner out tonight with Mrs H and son #2. The Mission in Kierland never disappoints. Anticuchos de Cameron for appetizer. Filet Mignon with poblano grits, beer onions, haricot verts, and chorizo baked potatoes on the side to share.

Gratin de chou fleur!
So good! With simple salad. Grapes for dessert. 1 head cauliflower, cut into florets, blanched and well drained. 1 onion, sliced and caramelized 2c bechamel 1oz gruyere, grated —> added to bechamel thereby creating mornay sauce 2T-3T parmesan, grated 2T-3T breadcrumbs in 1T melted butter Place florets in baking dish, cover with onions, then bechamel. Sprinkle parmesan and breadcrumbs. Bake for ~45-50 minutes at 375F, place under the broiler for ~1 minute to brown breadcrumbs. Serve with salad or roasted meat. Basic bechamel 2c whole milk 2T flour 2T butter Nutmeg Salt and freshly ground black pepper Cook butter and flour into a roux until just starting to deepen in color. Add milk, whisk well and cook ~5-7 minutes constantly whisking. Remove from heat, add freshly grated nutmeg, salt and pepper. Add gruyere if making mornay sauce and mix well. Left over home made shepards pie and lazy man baked "stuffed" shrimp. No jumbo shrimp on hand, but i had some 20 count shrimp... A dollop of sea food stuffing (sorta home made) on the shrimp.
