Salad and Chaldean flatbread!

This bread is so good. I try to arrive at the market during their baking times! Most of the time = success! Salad with egg, kalamata olives, pepperoncini, gruyere, evoo and fresh lemon juice.

Amazon. Bought Oct 6'th. Have about 1/3 of the bottle left. $25.00. Was not much more (maybe twice the cost) of the 8 oz bottle. It's my favorite go to hot sauce. A tad less hot than Tabasco, and more flavor than Red hot. A good middle ground...

“Sicilian pasta with no name”

Inspired by Aden Films on yt.

Garlic and anchovy filets fried in oil with tomato passata, blanched arugula and smoked mussels. Garnished with parmigiano reggiano, fried breadcrumbs, freshly ground black pepper and evoo. This has great depth of flavor!

I used fettucine because it was on hand. The chef in the video used ditalini, a small soup-type pasta. I am partial to spaghetti and would choose it over others for this item. I used passata and arugula for the same reason, the chef used canned tomatoes and a leafy green from his garden. I added mussels and a small amount of crushed dried rosemary.

Grapes for dessert.

Caponata!
Aden Films on yt

This is dynamite. A Sicilian vegetable stew featuring eggplant, olives and tomatoes. Great depth of flavor. Ingredients include fried eggplant, simmered celery and onion, green olives, capers and tomato sauce. A unique ingredient is an equal part mixture of white vinegar and honey. I usually don’t prefer sweet in my main course but was willing to try it.

Each vegetable is cooked individually, then combined with capers, olives, tomato sauce and vinegar-honey solution. Honey quantity can be adjusted up or down according to taste. Notable by their absences are cheese and garlic. Other variations include garlic and bell pepper. Caponata is on the ratatouille-shakshuka spectrum.

It is referred to as a relish or condiment, and accompanies many things well, for example bread, meat, eggs and pasta. I enjoyed the caponata on fettuccine leftover from last night.

Pork and baked beans. Homemade beans. Yummy beans w/o a tin aftertaste. Simmered and nurtured for several hours with a level of persnicketiness that only the gentle hands of a nurse can provide.

And they're really good.
