Damn, that looks good. I hadn't heard of tri tip until my son went to Cal Poly San Luis Obispo. In that college town, you could get tri tip sandwiches everywhere.

Great cut of meat - simple marinade, hit it with some smoke and you've got a meai plus some leftovers for a reasonable sized family. Santa Maria near SLO is the home of legendary tri-tip, so don't doubt they had some good stuff there.

I had to make a rare trip far outside the COVID bunker yesterday, and coincidentally there was a rare (for the northeast) Chit-Fil-A right next to where I was going. My one encounter with Chit-fil-A down south a few years ago was disappointing, so I figured that I'd give it one more try where northern workers and better water might make a difference. Nope, the sweet tea still sucked, and the sandwich was bland. I don't know what the people in the southeast see in that place. All y'all can keep it!

Popeyes, OTOH, got their chicken sandwich right IMHO (in my *hungry* opinion).....
