Love me some smokies!

For us, last night was stuffed peppers, cajun style. Cajun mirepoix (onion, celery, green pepper), zucchini, crushed tomatoes, leftover rice. 30 minutes @ 350 degrees. I used a little too much cajun spice, so we threw a dollop of sour cream on our plates and used that to cut the heat.

Probably belongs in the BBQ thread, but this made some great pulled pork sammies and will be going into taquitos for this evening's finger food potluck/gift exchange at the clubhouse.

Second image show's how it went down. About 17 hours @225, though I could have pulled it after 16 for sure. You can see where I opened the BGE (actually a Kamado Joe, but you get the idea) to stir the charcoal around a bit before I went to bed. Temps are Fahrenheit, 'cuz USA. And, no, I don't know what's causing that weird oscillation. Clearly the temps aren't jumping around that much. Could be the controller starting to go bad.

Prime rib after an 8 hour slow cook, mashed potatoes, au jus, burgundy mushrooms, asparagus and Yorkshire pudding. As the official Christmas Eve chef, I am tired. LOL.....

Steak, golden potatoes with feta and red onion, kale salad with a whole bunch of goodies. I was running around like a chicken with my head cut off trying to get to the store for champagne before they closed while the wife chefed up this meal. Peroni with mine. Everything was scrumscious.

We do that too, my friend. This year we got Chinese food out the day before Christmas Eve. A lot of it, so it will last a couple days. We like leftovers. Btw, married in 1975. We're an old couple, with one kitty.

PS - sorry, no pics. It's all in the fridge now.

My friend made a venison and pork tourtière for our Christmas dinner. While she was slaving over a hot stove, I was snoozing.

Stollen for dessert.
