The instructor was using the Force to steer and brake. It's like giving your little brother a disconnected controller when you play so that he thinks he is racing.

these are fairly standard hand gestures when you aren't using an in car communicator or the communicator isn't working.

I enjoyed giving my little brother the controller and watching him stuff up and then showing him how it's done...

Mind you, this didn't last long - he turned things around quick.
