Was inspired to smoke some beef ribs after having some incredible ribs in Austin. Got a Traeger pellet smoker a year ago and have enjoyed learning. Today was my first time making beef ribs. Was really tasty!

Trimmed and seasoned:

Three hours into the cook:

Ready to wrap in butcher paper:

Finished and ready to slice:

Sliced:

Thanks! Really enjoyed those ribs tonight. I've learned so much in the last year about BBQ. I've been in Austin the last two weekends to drive at COTA (Edge Addicts and Super Lap Battle). Had Franklin the first weekend and Terry Black's the second. Amazing food. A year ago, I tried Franklin for the first time and was blown away.....never had anything like that before. I was so inspired, a month later, I had a pellet smoker and was trying my hand at briskets. Fun journey.

Is BBQ a professional thing for you? Or a personal pursuit?

A giant short rib chimichanga. This is supposed to be for 1 person... but I swear my entire family could have feasted on this. I got about a third of the way through and packed the rest to go.

Definitely a hobbyist! But I have been grilling and smoking for 20+ years. So I have definitely learned lot's of trial and error. And I've taken the natural progression of creating my own Marinades.
My specialty: Ribs, Chicken and Pork Butts.
