should I drain and replace coolant, do thermostat and water pump, or just refill?

So I was driving yesterday and I street parked facing uphill on a pretty steep incline. When I was leaving, I was just sitting in the car with it running for a couple minutes while i used my phone, and the low coolant error showed up on the dash. I immediately thought "sh*t, probably the water pump. awesome." so I drove to a level area, turned the car off, and restarted it. Upon restarting, the error went away, and I drove home. I checked the coolant level this morning, and it is a bit low (the float isn't really floating up past the cap as it should.)

So, I've been thinking I should drain and replace the coolant as a maintenance item anyway. The car has about 81k, and to my knowledge, the coolant hasn't been replaced. The DIY seems somewhat straightforward for this, however I only own one jack and two jack stands, so I'm trying to decide if I can even attempt the coolant drain with just the front of the car jacked up, or if I should just refill the coolant and take it to a shop for a full drain and refill later.

And/or, should I be looking to replace the water pump and t-stat during this time, too? From reading on here, I feel like I'm running on borrowed time with 81k and original water pump and t-stat, but I'm not sure if I'm prepared to tackle that job.

Just add coolant. I had the same thing happen to me. I had my low coolant light come on around the same time actually and then i just filled it up. I actually just replaced my t stat and pump last week. And you can do your flush when you change yours out.
