The ball was about a good 5cm away from the minimum mark. I was only briefly notified by the car for like a split second when I started it today. Why didn't it notify me when it dipped slightly below the min mark? I've recently checked the ecu errors but nothing came up?

The level probably wasn't low enough to trip the sensor consistently enough to trigger a notification.
Add coolant, continue to monitor. If it's leaking more than you're comfortable with, find the leak and fix it.

I think its been 2 months from when I last topped it up and now its again below the minimum point which doesn't trigger the notification for some reason. Since theres no leaks, I've been wondering if the issue is the coolant tank cap as I saw a thread talking about the coolant evaporating through it. I do however have the chalky white stains around the tank. Should I order a new cap?
