Actually, that's what you get when you use a wide angle lense. It has nothing to do with the fact that the pic was taken so high.

the curvature is emphasised by using a fish-eyed lens... otherwise it would look like any other horizon you're used to seeing

I think those are just the unskilled construction workers. Anyone who has a specialtiy or experience working on these sorts of projects I would assume are contracted for a very handsome amount.

I constantly see ads about positions in my field in dubai for hire... and its a hefty amount more when compared to the similar position in the states or canada.
