What Is This Italian Food?

so i went to a small bbq today of a friend of a friend----. anyway his mom had these buckets in the garage and inside was eggplant of what smelled like vinegar. she sliced it thin and it was really good. perfect for sandwiches, salad, etc.

what is this and how do i make it at home?
