H&R Race- 2" Front and 1.5" rear is one of the most aggressive systems I can think of.

Sport is not an inch lower. Sport is .6 of an inch lower than non sport suspension.
You would drop almost an 1 inch and a 1/2.
That's a pretty good amount.

I'll go out on a limb and say the ride will be horrible. You're going to sacrifice a lot of suspension travel on a suspension that is already low on travel. If ride quality is of ANY concern then you should also get new shocks/struts to go with the new springs. Maybe some Bilstein Sports.

Anyone install springs on your own? How hard is it? I am very mechanically inclined and have installed may suspensions on my previous VW's. So just wondering how long it takes and if any special tools needed?

The only tool I'd suggest is a spring compressor for the front. Otherwise, there are not any special tricks and given you have done VWs in the past, you will be fine on the E90.

I know 5 different cars all of which ran H&R race. It has the lowest drop of all the springs available. I would not run it on stock sport or non-sport shocks. You will eventually blow them out. Out of those 5, 3 soon added koni yellows after about a year because their shocks were starting to show wear and the car was getting bouncy, and the suspension was less predictable. Do it right the first time and if you want to run H&R race, run some koni yellow shocks. Don't pay for install twice and do it right the first time. It will look good, but once your shocks go bad, you'll regret not saving up and waiting do have done the springs+shocks all at once.
And as for install, it isn't that bad. Basic tools, jacks and a jack stand plus a spring compressor which you can rent or buy for pretty cheap. On your own it will take a few hours.

Top nut on the struts is kinda a pain. I used a spark lug socket and an allen wrench to get that thing tight, but without a socket you can put a box wrench on it would be a pain.
