Brake fluid

Gents,

What is the best brake fluid to put in the car? Is 5.1 the best or can you go higher than that?

I plan to install braided hoses and Cool carbon pads in my BMW BBK and want to replace the fluid as well.

Also how much do I need for complete swap of fluids?
