Temperature Gague Showing Higher

So it was around 100 degrees today in NY and I noticed my temperature gauge shows slightly above 210 is this normal or do I need to change my coolant?

Can the outside temperature affect that gauge to go up?

Also what type coolant would I use?
I have a 07 328i coupe
