These are my winter tires and are used for the winter. Why would you even think of running them in the summer?

I would not run them in the summer. You'll chew right through them.

Winter tires are specifically designed to be used in lower temperatures. From my experience and customer feedback in summer temps these will handle very poorly, wear out quickly and have much reduced levels of grip.
If you got a great deal on the wheels, that isn't a problem. Simply dismount the winter tires and resell them or use them yourself in winter time.

I ran Blizzak LM 22's (similar performance winter tire) one summer just cuz I wanted to run 'em down. They handled fine at 99 mph. Run 'em if your goal is just to run the tread down; if not, save 'em for the winter.

Would this be for a summer tire? An all season tire? Anything more you can tell me about your driving style and conditions that would help me give you a more accurate recommendation?

That's a fairly low offset so I would stick with 225/40R18. Maybe 235/40R18 if you're feeling lucky.
