You will need:
1. Certificate of conformity - i.e. to show the build meets EU spec.
2. Proof of ownership.
3. Proof of VAT paid.
4. If the car is 4 or more years old, a "contrôle technique" (the French MOT).
5. Proof of I.D. (eg passport).
6. French car-insurance.
7. I'm unsure whether or not you need proof of residency (I don't think you do but I read somewhere that it was needed).

You have to visit various offices, filling in forms and paying money. One item you'll have to pay is an "eco-tax" - how much depends on various factors, and it can work out quite expensive for a newish car with a poor carbon footprint.

Search some of the ex-pat forums for more detailed information.
