Aren’t there a range of normal oil operating temperatures, like cars in general to range from 220~240F, then what would M240’s particular lower end be?

From my situation, at what temp should I consider its warmed for normal driving (3k~ish RPMs) or when could I turn the Auto Stop on from initial warm ups.

I believe BMW considers 6-7 miles of driving as "warmed-up". I seem to recall it requires this many miles before Launch Control will function, but I may be wrong.

Not to be picky here, but it depends upon what you consider "normal" driving. I do "normal" driving within 5-10 seconds of startup and I'm sure the oil is less than say 100 or 120 degrees. If I'm gonna run the RPMs up above 3k then i want it over 200 degrees, perhaps more. I simply take it easy till I've got at least 7-12 miles on it, seems to me i gotta put at least 10 miles on to get it above 210 degrees, but that's gonna vary with air temps.
Me i totally avoid the auto stop feature all the time.

I’ve noticed recently (maybe due to the cooler outside temps?) that my oil temp is now topping out in the low to mid 220s sometimes… It used to be 232 degrees F without fail, every drive and stay there. Now it oscillates a bit and sometimes even decreases to the upper 2 teens before getting back into the 220s. Curious if anyone else has noticed the same thing?

I’ve noticed this in the last few weeks with colder weather in the UK.

It also happened around the time my car was in the dealer and had a software upgrade so assumed it was that.

You had an update recently?

No recent software updates that I’m aware of. I’m close to 13K miles and it will be one year of ownership next month. First oil change was just before the 10K mark. So new oil and cooler temperatures are the only changes I’m aware of (and may be the reason).

Did you change the viscosity of the oil or did you stick with 0w-20?

Thinner oil, especially in a cold engine, will dissipate heat quicker than thicker oil, so if anything the thinner oil is causing the engine to not heat up as quickly. This does not mean the engine does not warm up quickly, but just a difference in thin vs. not-as-thin oil.

I believe what contributes to fast warm-ups in the B58 is various valves and active radiator grills that are all part of the heat management system.
The rate at which the water evaporates from the oil will depend on its vapor pressure at that temperature. It is pretty high by 80-90C and will evaporate out of the oil. It will just take a bit longer than at 100C.
